I use centre main sheeting with a cleat and find single handing with it, no problem.
With the jib sheets tied together, before I tack, I normally ease off the main a few inches and recleat.
Then i hold the cleated jibsheet, start the tack, uncleat the jib and pull in on the new side.
Jibsheets are easy to reach as they are tied together, though I always have them tidy before making the tack.
